Victors of the last two Bow Valley Taste Off contests, the Fairmont Banff Springs is confident they have another winning dish in their Cascade Huevos Rancheros at their Bow Valley Grill.

I asked Executive Chef JW Foster about the dish and whether they think they can pull off the three-peat.

Dining in any of the Fairmont Banff Springs restaurants is about more than just the food.  Stepping through the large revolving doors into the massive main lobby filled with impeccably dressed staff truly makes one feel they’ve been transported into another world.  There’s no other property quite like the Banff Springs and there’s also nothing quite like spending an afternoon exploring its palatial grounds and experiencing everything it has to offer.  Everything at the Springs is set to a high standard and the food is no exception.  They’ve assembled a talented team in their kitchens and are extremely confident they make some of the best food in the Bow Valley.  That confidence shines through in every dish they prepare.  From the creativity and plating to the fresh ingredients and attention to flavour your odds of ordering an excellent meal in any of their restaurants are high.  The Cascade Huevos Rancheros is a great, full breakfast.  I loved the attention to texture – the hard and crunchy corn tortilla blends well with the softer egg and pork.  Everything tasted wonderfully fresh, especially the generous sliced avocado on top.  It tastes authentically Mexican and also authentically Fairmont Banff Springs – another award-worthy entry!
